Pandemic Baking | Softest, Chewy Chocolate Chip Cookies

I'm a sucker for anything chocolate chip cookies but nothing like the ones made at home.  Not even the popular, imported brands can capture the decadence of a home-made, freshly baked cookies.  I still get that 'commercialized' after taste whenever I eat the supermarket brand.  I still eat em anyway though.  Now, after multiple attempts of recreating and pursuing the best chocolate chip cookie, I am finally resolved with this recipe.  I slightly modified it from different baker bloggers AND surprisingly this came out to be the easiest one to make. Soft and Chewy Chocolate Chip Cookies Ingredients: 1/2 cup butter, melted (liquid consistency) 3/4 cup brown sugar 1/8-1/4 cup granulated sugar 2 tablespoons honey (ting! secret's out) 1 egg 2 cups all purpose flour 1/4 teaspoon baking soda 1/4 fine salt 2 teaspoons vanilla 3/4 cup chocolate chips Procedure 1. Fast track

Hey how's everyone holding up?  I hope you are all well and safe and healthy. Consider this my redemption blog and yes, you can all point this out as a result of being quarantined at the moment and also because I just miss writing. I really do. Ok, so fast track six years after.  I am now 40 years old and had to edit my description from a mama of one to now a mama of two!  Two beautiful babies (I still call my eldest daughter baby.  She's 10).  I am still tied up as a working mama and enjoying every bit of it. About a month and a half ago, our government placed our country to Enhanced Community Quarantine as a measure to mitigate the spread of a deadly virus called the Coronavirus.  Not sure why people coined Corona and virus as one word but, yes, it's a big one and currently blowing up the entire world's economy, obviously mortality and social dependency.  Wearing of mask is mandatory and 2-meter social distancing is imposed whenever one goes ou...

Am sick

I ditched work yesterday. I was down with a nasty flu and a terrible sore throat.  Body cramps, I can get away with that but a swollen throat is worst.  Swallowing was so hard, I cried every time I take my fluids. 😢 But fluids saved me. I am now more careful when taking medications so whenever I feel weird physically, I drink water. Liters and liters of water and it worked.  I just slept over it and am now up on my feet. Hydration is important! Now my head is spinning thinking of my missed deadlines. Tsk.

Morning

C-c-cold morning. I think it's 23 C earlier today which I really like. But the best part of my morning is this smile. I took this just right after her first round of milk.  A full tummy really makes a difference!

Who's going to school?

Yeah so my 3 turning 4 this March, daughter is going to school. I can't believe I have a student! It's pretty exciting to know she's marching on with life as kindergarten and the thrill of knowing what is out there and experiencing different people...ah, it's such a joy. I promise I will be the most supportive, understanding, patient and protective parent - mom- to you.  I'll let you fly as far as you can with cautious and responsibilty, with mutual trust and respect to God and us, your parents.  There's no turning back young lady. The journey's on!
